Handmade - Hand Picked - Basket Pressed - Barrel Aged on Lees - No Acid or Enzymes Added - Natural Wild Yeast Ferment

 

Vineyard ~ Bungarmero Vineyard, Alpine Valley

As the popularity of this variety as grown over the last couple of vintages we made the decision to swap vineyards as to ensure a greater supply of fruit as to keep up with demand. This release comes from the Bungarmero Vineyard. Brothers Tim and Mark Walpole planted the 18-hectare vineyard at Whorouly South in 1989. They selected this particular property because of its north-east aspect and well-drained gravel and red loam soils. Fiano was planted at the vineyard in more recent times as the variety is an excellent match for the climate. Needless to say we are very excited about working with this fruit in the future as the maiden release is a tighter, brighter and fresher example of the variety, exactly what we are chasing. We think this is definitely our best Fiano to date.

As with all wines released under the Nomads Garden range input from us in the winery was kept to an absolute minimum. Instead careful attention was paid to working closely with Tim and Mark and ensuring the grapes were picked at exactly the right moment to ensure the natural pH and the flavours were just right.

Once in the winery the fruit was crushed and then gently pressed. 50% was put directly to seasoned French Oak, while the other half tank fermented. Oak of this age will impart very little, if any oak characteristics instead we believe they are the best vessel for wines to ferment and age in. Oak is a natural product that allows the wines to breath and evolve with time, something not possible with tanks. Once the juice was in barrel and it was protected with CO2 until the natural yeast indigenous to vineyard took hold and begun the fermentation process, when using natural yeast we expect fermentation to begin with 3-5 days of crushing. Ferments were temperature controlled in our barrel room and tanks to stay at approximately 18 degrees Celsius to retain aromatics, this is slightly cooler than previous releases. Once fermentation was complete the Fiano was put to barrel and all was allowed 10 months to rest on its lees (lees are the solids that drop and of the wine post fermentation) to create texture. No stirring of the lees was conducted. The wine was lightly filtered and hand bottled in our winery. Vegan Friendly.
