THE VINEYARD

The Mt Bellevue Vineyard would have to be in contention for the most visually spectacular vineyard sites in Australia. The vineyard straddles the ridge line at an elevation of 652m ASL, with the hillside plummeting steeply to the valley floor on each of the headlands.

This ultra cool, high elevation site is predominantly planted with Pinot and Chardonnay for sparkling base. There is solitary row of Pinot Blanc planted as a long forgotten trial amongst the Chardonnay. In the past the fruit was not deemed suitable for a single varietal wine and was simply blended away as the volume is so tiny.

A personal love of this variety is the main reason it is worthwhile for us to make this tiny parcel of fruit into a small batch wine.

THE WINEMAKING

Machine picked in the cool of the night and immediately pressed to stainless steel the press cut was made at about 6OOL/T with pressings combined with the free run. We find this gives more complexity and texture to this particular wine. Cold settled then racked off heavy solids and allowed to warm to allow a natural wild ferment to occur. Once established the ferment is kept ultra cool at 13°c throughout fermentation and racked clean off lees once fermentation was complete.

THE WINE

Bright yet subtle aromatics of fresh white flowers & crunchy apple. The hallmarks of the palate are green pear, mouth filling complex texture, complimented by a long natural acidity. A truly unique small batch wine made from grapes from a remarkable place.
